4-Course Set Menu by Head Chef, James Young: Delight in a meticulously crafted 4-course menu, showcasing the best of Welsh cuisine. Each dish is thoughtfully paired with a carefully selected wine from Villa Cosmiana.

Tuscan Wines from Villa Cosmiana: Discover the superior quality of wines from Villa Cosmiana, an estate nestled on a gentle hill in the charming medieval city of Peccioli, near Pisa.

First Course – Rarebit Croquettes & Garlic Prawns – Dry Unoaked White Wine

Second Course – Pan-fried Seabass, Charred Chicory & Romesco Sauce – Oak Aged White Wine

About Villa Cosmiana:

Villa Cosmiana has a rich history dating back to its golden age in the mid-19th century under the ownership of Amerigo Antinori, Duke of Brindisi.

After years of decline following the passing of its last resident owner, Princess Maria Antinori-Aldobrandini, in 1933, the estate was lovingly restored by Welshman Sean Craig from Abergavenny.

From 2018 to 2021, Sean has been dedicated to revitalising the estate, unveiling its artistic treasures, splendid gardens, and, most importantly, its superior quality wines.
